At Faisán, it all begins with sourcing the best chocolate couvertures and cacao beans for my confections. This means using fine cacaos, single origin, fully traceable, sustainable, and above faire trade.  I then pair these chocolates with selected spices, nuts, and fruits to create exciting combinations inspired by flavors from near and far.
